Tomato Sauce
Make this tomato sauce to serve with your pasta—it’s delicious! Here’s how:
Ingredients
- •1 kg ripe tomatoes
- •2 tablespoons olive oil
- •2 garlic cloves, minced
- •1 medium onion, chopped
- •1 teaspoon sugar
- •Salt to taste
- •Pepper to taste
- •Fresh basil leaves (optional)
Instructions
- 1
Wash the tomatoes thoroughly and score an “X” on the bottom of each one.
- 2
Bring a large pot of water to a boil.
- 3
Add the tomatoes and cook for about 1 minute.
- 4
Remove the tomatoes from the boiling water and transfer them to a bowl of ice-cold water to stop the cooking process.
- 5
Peel the tomatoes, pulling the skin away from the “X” cuts.
- 6
Cut the tomatoes in half and remove the seeds.
- 7
Heat the olive oil in a large saucepan over medium heat.
- 8
Add the chopped onion and garlic and sauté until soft and lightly golden.
- 9
Add the chopped tomatoes to the pan and stir well.
- 10
Simmer over low heat for about 15–20 minutes, stirring occasionally.
- 11
Mash the tomatoes with a wooden spoon or use an immersion blender for a smoother consistency.
- 12
Season the sauce with salt, pepper, and sugar. Adjust the amounts to taste.
- 13
If desired, add a few fresh basil leaves to the sauce and cook for a few more minutes.
- 14
Remove the sauce from the heat and let it cool slightly before using. You can store it in an airtight container in the refrigerator for up to a week.
