Tamarind Jam with Brown Sugar
If you like jam, you'll love this Tamarind Jam with Brown Sugar. Give it a try!
Ingredients
- •700g tamarind
- •1 cup (200ml) brown sugar; you can use demerara or another sugar of your choice
- •500ml water
- •3 cloves
Instructions
- 1
Start by shelling the tamarind pods. Rinse them if you wish, then place in a container with a lid and add the water. Cover and leave to soak overnight.
- 2
The next day, press the tamarind through a sieve in small batches, using the back of a spoon or your hands to separate the pulp from the seeds and fibers. You will be left with a thick, concentrated pulp.
- 3
Transfer the concentrated pulp to a pan, preferably a deep, heavy-bottomed one, and add the sugar and cloves.
- 4
Cook over medium-low heat, stirring occasionally, until the mixture pulls away from the bottom of the pan. At this point, if you prefer a softer jam, add a little water and stir over low heat for about two minutes.
- 5
Turn off the heat and transfer the jam to a container. It will firm up once cooled and refrigerated.
