Ingredients

  • •1 1/2 glasses of water (300 ml)
  • •1/2 tablespoon salt (5 g)
  • •2 tablespoons sugar (20 g)
  • •3 cups plain flour (500 g)
  • •1/4 glass olive oil (50 ml)
  • •1 tablespoon dry yeast (10 g)
  • •200 g grated mozzarella
  • •200 g Brazilian calabresa sausage (150 g grated and 50 g sliced into rounds)
  • •200 g homemade Catupiry or Brazilian requeijão cream cheese
  • •Oregano to taste

Instructions

  1. 1

Place the yeast, sugar and water in a bowl and whisk well.

  2. 2

Add the olive oil, then gradually add the flour, adding the salt with the first portion of flour.

  3. 3

Once the dough becomes too stiff to whisk, remove the whisk and continue adding the flour, kneading by hand until the dough reaches the right consistency.

  4. 4

Transfer the dough to a work surface and knead until elastic.

  5. 5

Shape the dough into a ball, dust the bowl with flour, place the dough inside, cover with a cloth and let rest for 30 minutes.

  6. 6

After resting, roll out the dough into a circle approximately 40 cm in diameter.

  7. 7

Place the dough on a pizza pan, pipe or spoon Catupiry all around the edge, then sprinkle with grated mozzarella and oregano.

  8. 8

Fold the dough hanging over the pan over the filling around the edge and press firmly to seal.

  9. 9

Spread tomato sauce over the center of the pizza and let rest for 30 minutes.

  10. 10

After resting, bake in a preheated oven at 200°C for 35 minutes.

  11. 11

Remove from the oven and top with a layer of grated mozzarella, a layer of grated calabresa sausage, another layer of grated mozzarella and a layer of sliced calabresa sausage. Sprinkle with oregano.

  12. 12

Return to the oven for another 10 minutes to melt the cheese and finish browning the pizza.
