Ingredients
- •4 2/3 cups whole wheat flour (780g)
- •2 eggs
- •1 tablespoon baker's yeast (10g)
- •2 tablespoons salted butter (50g)
- •2 generously heaped tablespoons brown sugar (50g)
- •2 glasses warm milk (400ml)
- •1 egg yolk for brushing
Instructions
- 1
Place the yeast, brown sugar and milk in a bowl and stir very well.
- 2
Add the eggs and stir a little more. Add 1/4 of the whole wheat flour, beat well, cover with plastic wrap and let rest for 30 minutes.
- 3
After resting, stir the dough to release the air. Add the butter and stir to incorporate, then gradually add the remaining whole wheat flour, beating well to prevent lumps.
- 4
When the dough becomes too stiff to stir, remove the spoon and knead by hand until it is no longer sticky.
- 5
Transfer the dough to a work surface dusted with whole wheat flour and knead for about 10 minutes, or until smooth.
- 6
Brush the bowl with olive oil, place the dough inside, cover with plastic wrap and a kitchen towel, and let rise for 40 minutes or until doubled in size.
- 7
After rising, knock the air out of the dough. Lightly oil the work surface with olive oil, divide the dough into portions, roll each portion out to approximately 5mm thick with a rolling pin, then roll up to form loaves.
- 8
Place the loaves in pans greased and dusted with whole wheat flour, cover with a kitchen towel and let rise for 40 minutes.
- 9
After rising, brush the loaves with the egg yolk, dust with whole wheat flour and make a few decorative slashes with a very sharp knife.
- 10
Place the pans on a larger baking tray and bake in a preheated oven at 180°C for 40 minutes, or until golden brown.
