Roast Pork Loin with Pineapple
Make roast pork loin with pineapple the simple and easy way.
Ingredients
- •1.700 kg pork loin
- •250 ml orange juice
- •1 tablespoon mustard (20 g)
- •1 tablespoon soy sauce (15 ml)
- •4 tablespoons olive oil (60 ml)
- •4 cloves garlic (15 g)
- •1 large onion (120 g)
- •2 tablespoons salt (40 g)
- •1 tablespoon chimichurri seasoning (6 g)
- •1/2 teaspoon smoked paprika (2 g)
- •1/2 teaspoon black pepper (3 g)
- •Rosemary to taste
- •1 large pineapple (890 g)
- •6 potatoes (600 g)
- •1 onion (120 g)
Instructions
- 1
Start by preparing the marinade: combine the lemon juice, soy sauce, mustard, olive oil, onion, garlic, chimichurri seasoning, paprika, pepper, salt and rosemary in a large bowl.
- 2
Mix well.
- 3
Cut the pork loin into slices about a finger's width thick.
- 4
Prick each slice of pork with a fork to help the seasoning penetrate.
- 5
Add the pork to the marinade and mix well to coat all the meat. Cover with plastic wrap and refrigerate for one hour.
- 6
Now assemble the dish: first cut the pineapple into thin slices, then arrange alternating slices of pork and pineapple in an ovenproof dish or roasting pan until all the slices have been used.
- 7
Pour the marinade into the dish, add the potatoes and the onion cut into quarters, sprinkle a little salt over the potatoes and finish with rosemary over the potatoes and pork.
- 8
Cover with aluminum foil and bake at 220°C for one hour.
- 9
Remove from the oven, take off the foil and drain the excess liquid released by the pineapple from the dish.
- 10
Return the pork to the oven uncovered, increase the temperature to 250°C and roast for approximately 15 minutes, or until golden brown.
