Pineapple Delight
Make this unique Pineapple Delight dessert to enjoy after dinner!
Ingredients
- •Flesh of 3 small pineapples
- •1 cup granulated sugar
- •650 ml whole milk
- •1 can full-fat sweetened condensed milk
- •1/2 cup powdered milk
- •2 tablespoons cornstarch
- •3 egg yolks
- •1 dessertspoon vanilla essence (I used natural vanilla essence)
- •1 can cream, chilled and drained of its liquid*
- •3 chilled egg whites
- •3 tablespoons caster sugar
Instructions
- 1
Boil the flesh of 3 small pineapples with 1 cup of granulated sugar.
- 2
Once the pineapple mixture is cooked, transfer it to a medium-sized ovenproof dish and set aside while you prepare the custard.
- 3
Place a sieve over a saucepan, add the egg yolks and pierce them with a fork. Leave them undisturbed until they have all passed through the sieve.
- 4
Add the sweetened condensed milk and cornstarch to the strained yolks and whisk well until all the cornstarch has dissolved.
- 5
Add the powdered milk and mix well, then add the milk and mix well again.
- 6
Turn on the heat and stir constantly until the custard begins to thicken.
- 7
Once it starts to thicken, keep stirring for three minutes to cook the cornstarch thoroughly.
- 8
Turn off the heat, add the vanilla essence and mix very well.
- 9
Pour the custard over the reserved pineapple mixture, spread it evenly, cover with plastic wrap and refrigerate for three hours.
- 10
Now finish with the topping.
- 11
Beat the egg whites until soft peaks form. I used an electric whisk.
- 12
Stop the whisk, add the sugar and beat until very stiff peaks form.
- 13
Gently fold in the cream using a hand whisk. Spread the topping evenly over the thoroughly chilled custard and pineapple layers.
- 14
Refrigerate uncovered for two hours or until ready to serve.
