- •500 grams small potatoes
- •200 ml olive oil
- •1 cup black olives
- •2 bay leaves
- •1 onion
- •8 garlic cloves
- •Chopped parsley to taste
- •Black pepper to taste
- •Salt to taste
Instructions
- 1
Rinse the cleaned octopus thoroughly and drain.
- 2
Bring 2 liters of water to a boil, immerse the octopus for 5 seconds, then remove it.
- 3
Repeat this process twice more, leaving the octopus in the boiling water after the final dip.
- 4
Add 1/2 onion, 1 bay leaf, 2 crushed garlic cloves, and black pepper to taste.
- 5
Cover and, once the water returns to a boil, reduce the heat to low and cook for 30 to 40 minutes. Transfer the octopus to an ovenproof dish.
- 6
Place the small potatoes in a saucepan with enough water to cover them and a pinch of salt.
- 7
Cover and cook until tender.
- 8
Gently press the potatoes with your fist to lightly crush them, then arrange them in the dish with the octopus.
- 9
Crush or chop the garlic and tuck it between the potatoes.
- 10
Season with salt to taste, drizzle with the olive oil, and roast for 25 minutes in an oven preheated to 180°C.
- 11
Carefully remove from the oven and finish with the black olives and chopped parsley to taste. Your lagareiro-style octopus is ready to serve.
