Estação da Luz Cake
A coffee, chocolate and orange cake with a golden topping and decorations inspired by the station’s metalwork. The idea is to create a dessert featuring traditional São Paulo flavors with a contemporary presentation.
Ingredients
- •3 eggs
- •1 cup sugar
- •1/2 cup melted butter
- •1 cup milk
- •1/2 cup strong brewed coffee, cooled
- •Zest of 1 orange
- •2 cups all-purpose flour
- •1/2 cup cocoa powder
- •1 tablespoon baking powder
- •1 pinch of salt
- •1/2 cup brewed coffee
- •1/2 cup orange juice
- •3 tablespoons sugar
- •Orange zest
- •150 g semisweet chocolate
- •100 ml cream
- •1 tablespoon honey
- •Finely grated orange zest
- •Small pieces of chocolate
- •Powdered sugar
- •Optional: chocolate leaves or small chocolate decorations molded into lines and arches, echoing the station’s metal framework
Instructions
- 1
Preheat the oven to 180 °C. Grease a round cake pan approximately 22 cm in diameter.
- 2
In a bowl, mix the eggs, sugar and melted butter until smooth. Add the milk, coffee and orange zest.
- 3
In another bowl, sift together the flour, cocoa powder, baking powder and salt. Gradually fold the dry ingredients into the wet mixture, stirring gently until the batter is smooth.
- 4
Pour into the pan and bake for approximately 35 to 40 minutes. Check for doneness with a toothpick before removing from the oven.
- 5
While the cake is baking, place the coffee, orange juice, sugar and zest in a small saucepan. Cook over low heat and let reduce for a few minutes until you have a slightly thickened syrup.
- 6
Remove the zest and set the syrup aside.
- 7
Melt the semisweet chocolate in a double boiler or in the microwave in short bursts. Stir in the cream and honey until the ganache is glossy and creamy.
- 8
Once the cake is lukewarm, poke small holes in the surface with a fork or toothpick. Drizzle with the coffee and orange syrup, allowing it to soak into the cake.
- 9
Spread the ganache over the cake.
- 10
Finish with orange zest, powdered sugar and chocolate decorations that evoke the arches and metal framework of Estação da Luz.
