Cornmeal Bread with Guava Paste

Ingredients

  • •250 ml warm water
  • •4 tablespoons sugar
  • •12 g dry yeast
  • •1 egg
  • •½ cup oil
  • •1½ cups fine cornmeal
  • •3 cups wheat flour
  • •1 teaspoon salt
  • •Rustic guava paste with pieces of peel (goiabada cascão), as needed

Instructions

  1. 1

Place the water, yeast and sugar in a bowl and mix.

  2. 2

Add 1 tablespoon of wheat flour, taken from the total amount in the recipe, and mix again.

  3. 3

Add the egg and oil and mix briefly.

  4. 4

Once the egg is blended into the liquid, gradually add the cornmeal, stirring constantly until everything is combined.

  5. 5

Set aside ½ cup of the wheat flour to use when kneading the dough.

  6. 6

Add the remaining flour to the bowl and mix until no dry flour remains and the dough comes together into a ball.

  7. 7

Dust your kneading surface with wheat flour.

  8. 8

Turn the dough out onto the surface and begin kneading.

  9. 9

As the dough sticks to your hands, gradually add some of the reserved ½ cup of flour and continue kneading.

  10. 10

Continue until you have used all the flour.

  11. 11

The dough should be soft and slightly sticky to the touch.

  12. 12

Cover with plastic wrap and a cloth. Let rise until doubled in size, approximately 45 minutes.

  13. 13

Once the dough has risen, dust your rolling surface with wheat flour.

  14. 14

Turn the dough out onto the surface and sprinkle with a little flour so it does not stick to the rolling pin.

  15. 15

Using a rolling pin, roll the dough into a rectangle and spread butter over it.

  16. 16

Divide the dough into three pieces, place slices of guava paste on each piece and roll each one up to form a loaf.

  17. 17

Place in a greased baking pan dusted with cornmeal, cover again and let rise for 30 minutes.

  18. 18

After resting, bake in an oven preheated to 180°C for approximately 30 minutes.
