Salt Cod Salad (Christmas Recipe)
Salt cod salad is a traditional, elegant dish that is especially popular at Christmas dinner, bringing together bold flavor, lightness and sophistication!
Ingredients
- •500 grams desalted salt cod
- •50 grams green or black olives
- •10 grams cherry tomatoes
- •1/2 red bell pepper, chopped
- •1/2 yellow bell pepper, chopped
- •1/2 green bell pepper, chopped
- •1/2 tablespoon salt
- •50 ml olive oil
- •1 kilogram potatoes
- •1 onion, sliced
- •3 hard-boiled eggs
- •Parsley to taste
Instructions
- 1
Place the cod in large pieces in a saucepan and add enough water to cover completely. Set over medium heat.
- 2
Once the water comes to a boil, cook for another 8 to 10 minutes. Transfer the cod to another container, leaving the cooking water in the pan.
- 3
Peel the potatoes, cut them into medium-sized pieces and add them to the pan with the cod cooking water.
- 4
Add 1/2 tablespoon of salt and cook the potatoes until fork-tender but still holding their shape. Transfer the potatoes to another container.
- 5
Once the cod has cooled until lukewarm, use a fork to separate it into flakes; there is no need to shred it finely.
- 6
Remove and discard all the bones and skin from the cod. Set the fish aside.
- 7
Gently heat the olive oil in a large pan. Add the chopped onion and stir for 30 seconds to soften slightly.
- 8
Add the washed peppers, cut into strips. Sauté for a few minutes, stirring well.
- 9
Add the washed cherry tomatoes, chopped green olives and chopped parsley to taste. Sauté for 1 minute, stirring occasionally.
- 10
Add the flaked cod and cooked potatoes. Stir for a few more minutes, then turn off the heat.
- 11
Add the chopped hard-boiled eggs. Toss gently, just until the ingredients are evenly combined.
- 12
Transfer to a serving bowl and serve the salt cod salad warm, at room temperature or chilled.
