Ingredients
- •2 eggs (110 g)
- •1/2 cup cocoa powder (60 g)
- •2 1/2 cups all-purpose flour (400 g)
- •1 cup sugar (200 g)
- •1/3 cup oil (80 ml)
- •1/2 tablespoon baking soda (6 g)
- •Powdered sugar
- •Granulated sugar
Instructions
- 1
Place the eggs and 1 cup of sugar in a bowl and mix until well combined.
- 2
Add the oil and mix, then add the cocoa powder and mix well.
- 3
Add the flour and baking soda and stir well. When you can no longer mix with a spatula or spoon, start kneading with your hands. The dough should not be stiff; it should remain slightly sticky. Watch the video to see the right consistency.
- 4
Cover with plastic wrap and refrigerate for 1 hour or freeze for 20 minutes. The dough needs to be firm enough to shape.
- 5
Once chilled, use a spoon to scoop out small portions of dough and roll them into balls about the size of a medium brigadeiro, a Brazilian chocolate truffle.
- 6
Roll each dough ball in granulated sugar to create a coating around the cookie, then roll it in powdered sugar. Be generous so that the ball is completely covered; this will create the crinkled effect.
- 7
Place the cookies on a baking sheet lined with parchment paper, leaving space between them as they will double in size.
- 8
Bake in an oven preheated to 160°C for approximately 15 minutes.
- 9
The cookies will still be soft when they come out of the oven. Let them cool before removing them from the baking sheet.
- 10
You probably won't be able to bake all the cookies at once. I baked mine in 3 batches, so keep the dough in the refrigerator until you are ready to shape the next batch. It needs to stay firm enough to shape.
